The Murgia territory extends over 100.000 hectares, between the Bradanica hollow and the valley depressions, going as far as the Adriatic coast.

Thanks to this strategic position, both as to the sea and as to the mountains, the Murgia plateau has a particular climate: wind, dry summer, not rigorous winter; besides spring and autumn are very propitious for the wheat cultivation.

They are also very important the karstic nature of the underground and the rich vegetation, giving to the environmental ecosystem of Murgia a great naturalistic value.

These climatic-pedologycal characteristics give important chemical-physical features to the durum wheat varieties cultivated on this territory ( duilio, simeto, appulo, arcangelo: the wheat varieties provided by the Specification of PDO Altamura bread).

From this special durum wheat is obtained the "fine hard wheat semolina" for bread-making and bakery-making, and an "Extraction semolina", far better than the traditional durum wheat semolinas, used in the industrial pasta-making process.
