The quality of this product is of great value. It is obtained by
the milling cycle of the plants producing fine hard wheat semolina
for bread-making.
It is produced in small quantities and has a high value of yellow
colour and of protein content and has a homogeneous particle size.
It is advisable to use it for the production of choise fresh pasta,
which if produced by this particular raw material, the semolina,
keep unchanged the yellow colour and have the typical taste of semolina
, that characterizes the pasta after cooking.
Thanks to the extraction semolina, the fresh pasta keeps "al
dente" and has no masses.
